Pinot Noir provenit din vii de 35 de ani, situate în vârful dealului, orientate spre est, la o altitudine de 300 m. Sol argilo-calcaros de mică adâncime. Stâncă sub pământ. Macerare la rece aproximativ 1 saptamana. Fermentare îndelungată de 5 până la 6 săptămâni la 30°, cu remontare frecventă, folosind drojdii indigene. Invechire timp de 18 luni in butoaie de stejar francez (30% noi, 30% a doua folosire, 40% trei+ folosiri). You can see the first slopes of Pommard a few kilometers south-west of Beaune.
