Pinot Noir provenit din vii de 35 de ani, orientate est-sud-est, 250 m deasupra nivelului mării. Sol argilo-calcaros cu predominanță pietroasă, pe subsol calcaros compact. Macerare la rece aproximativ 1 saptamana. Fermentare îndelungată de 5 până la 6 săptămâni la 30°, cu remontare frecventă, folosind drojdii indigene. Invechire timp de 18 luni in butoaie de stejar francez (50% noi, 50% a doua folosire). The Clos de Vougeot is the cradle of Burgundy viticulture. This vineyard, dependent on the abbey of Cîteaux until the Revolution and whose castle and cellar have housed the brotherhood of the Knights of Tastevin since 1944, is described as the acropolis of wine-filled Burgundy. Celebrated throughout the world, the Clos de Vougeot is undoubtedly the best known, the most emblematic, the most legendary of the Grands Crus of Burgundy. |
